Grilled Zucchini Salad

This grilled zucchini salad is the perfect lunch. It’s light, refreshing, and packed with nutrients, making it a great choice to break your fast. The balance of vegetables, healthy fats, and the refreshing lemon dressing will leave you feeling satisfied without being too heavy.

Ingredients:
• 1 zucchini
• 2 red onions
• 2 corn cobs
• 1 block of feta
• 2 handfuls of arugula
• 1 tablespoon pine nuts
• 1 tablespoon pumpkin seeds

Dressing:
• Juice of ½ lemon
• 2 tablespoons olive oil
• Salt and pepper to taste

Instructions:
1. Slice the zucchini into thin rings and grill it, roast the corn, and cut the kernels off.
2. Slice the onion into thin half rings.
3. Roast the pine nuts and pumpkin seeds.
4. Mix the arugula, zucchini, corn, and onion in a bowl.
5. Add the feta and seeds.
6. Mix the lemon juice, olive oil, salt, and pepper, drizzle over the salad, and serve.
